I know this is a very late reply but have you played GTR2? It's graphics are a bit dated but you can tune your ride to the core.

I'm maxing out my level as much as possible.

Fighting a Lvl. 2000 Deathless with my Lvl. 92 Character.

I CAN'T BEAT HIM! DX
And yes, you actually DO have a chance against high level characters like these. It just takes some finger-swiping reflexes and patience.
