I love any kind of bacon, but if I had my way, I'd cook cured and hardwood or mesquite smoked bacon to a semi-tender crisp. And by semi-tender crisp, I mean with the bacon edges cooked crisp with the center slightly tender with just a bit of toothsome firmness.

It takes quite a bit of work to cook but OHHHHH GODS IN HEAVEN IS IT TASTY!!

2) Place them gently on top of a patty with cheese
3) Gently add lettuce, avacado, mushrooms, tomatoes, and 1000 islands sauce.
