Well, there's the Mother series, the first two Kid Icarus games, Shantae and I also feel that not enough people have played Okami.

I really, really need to play those PSX spyro games...And those Crash bandicoot ones too.
And you really should play mother. 'Specially Earthbound and Mother 3.

Both Spyro and Crash series are really really well done on PSX, but you'll really be amazed by Spyro 3, Crash 3, and Crash Team Racing.

The Crash trilogy was good. Although the secound one takes some doing to get 100% if you take in all the secret stages...
 
I dont have emulaters to support Earthbound
